Serious Comfort Food for Campers
At Gavins Point Recreational Center, we like to eat, sometimes a bit more than we really need to. We can’t help ourselves. In our defense, and I’m sure you’ve heard this many times in your life: food tastes better outside. Now that we’re in autumn, we’re thinking less about light food and more about the sort of cozy fare that pairs well with a pumpkin spice latte. Here’s some recipes that we’ve found that really get us excited!
Instant Pot Pumpkin Walnut Chili (from pinchofyum.com)
Okay, I know what you’re thinking: walnuts in chili? Chop them up finely, like ground beef. Fire-roasted tomatoes, poblano and chipotles peppers round everything out nicely for a chili that literally screams fall. Don’t forget to top it off with avocado.
Cinnamon Apple Pancakes (from freshoffthegrid.com)
Everyone loves pancakes, and this recipe turns the fall up to 11. The batter uses apple juice (or cider), with shredded apples to add texture and even more apple flavor. Pair with real maple syrup, and it’s a fantastic start to your day.
BBQ Chicken Bacon Pineapple Kabobs (from butterwithasideofbread.com)
With a simple barbecue sauce marinade, this is a super easy recipe with only four ingredients and only a minor amount of prep. Nothing pairs quite like barbecue sauce and pineapple, but once you’ve tried it, chances are you’ll be a believer!
Baked Pumpkin Goat Cheese Alfredo with Bacon (from tasteofhome.com)
This recipe is probably for when the fancy guests visit your RV at one of the trending campgrounds, but it’s unique and delicious. This works best with a spiral pasta like cellentani or cavatappi, but any type of pasta will do. Don’t like feta? Substitute with ricotta or even queso fresco.
Campfire Hobo Stew (from zestuous.com)
A departure from our last recipe, this Campfire Hobo stew can be made with kitchen-sink ingredients, wrapped in foil, over a campfire. Perfect for when the hobos come to visit your RV. Jokes aside, it’s back-to-basics, customizable and cozy: just perfect for fall.
Camping Mac ‘N Cheese (from laurenslatest.com)
This is comfort camping food at its finest, and better yet, this can be made in one pan. Add bacon or even cut up hot dogs for a dinner that will seriously stick with you through a chilly night. And if you want to wake you up a little bit, try a bit of chopped jalapeno.
We hope you find some inspiration with these recipes! Let us know if you try any, and more importantly, where and when you’re serving them, and if there’s any extra!
